The Story

Elimbari comes from the Chuave District in central Papua New Guinea, nestled within the New Guinea Highlands—a vast mountain range running across the island. This coffee is grown on the slopes of Mount Wilhelm, where the high altitude and unique growing conditions help shape its distinctive character.

Coffee here is grown mainly by smallholders in small plots known locally as “gardens.” These can range from just a handful of coffee trees to plots of around three hectares.

Once picked, the coffee cherries are pulped and dry-fermented for 24 hours in wooden or plastic boxes. The beans are then washed and dried on sails—stretched tarpaulin drying beds.

From there, the coffee is sold to collectors and taken to Kongo’s renovated dry mill, where each lot is cupped, selected, processed and, where necessary, hand-sorted before being bagged for export.

The result is a distinctive yet easy-drinking cup, combining gentle acidity with creamy kefir, ripe apricot and the earthy, aromatic character of Yunnan tea.
